A French slow-cooked classic with beef chuck, red wine, smoked pork belly, carrots and mushrooms. The rich stew is served with smooth mashed potatoes flavoured with garlic and lemon.

Cut the beef into pieces about 5 cm across and dice the pork belly. Peel the shallots, garlic and carrots. Roughly chop the shallots and carrots and slice the garlic.
In a large casserole, sauté the shallots, garlic, carrots, half the pork belly and the tomato purée in half the butter until the onions soften.
Brown the beef all over in the remaining butter in a frying pan. Add the water and bring to the boil for a minute. Transfer the meat and pan juices to the casserole. Sprinkle with flour and stir. Add the red wine, veal stock, soy sauce, thyme and bay leaves.
Bring to the boil, skim, then simmer gently with the lid slightly ajar for 1½–2 hours, until tender.
Mashed potatoes: Peel and boil the potatoes until soft. Drain and let the steam escape. Fry the garlic briefly in the butter, add the cream and milk and warm through. Mash the potatoes and whisk in the cream mixture. Season with lemon zest and salt.
Mushroom garnish: Peel the pearl onions, halving any large ones. Clean and halve the mushrooms. Fry the onions, mushrooms and remaining pork belly in butter until nicely coloured.
Season the stew with salt and pepper. Top with the mushroom mixture and serve with the mashed potatoes.
The berries’ acidity and fruitiness complement the deep wine sauce and salty pork belly.
A delicious alternative that lets the food take centre stage.
