Heat the oven to 175Β°C. Brown the meat in butter in batches so that the pieces are nicely coloured all over.
A French classic in which beef slowly cooks in red wine and stock. Bacon, mushrooms, pickled onions and a bouquet of herbs give the stew its characteristic deep flavour.

Heat the oven to 175Β°C. Brown the meat in butter in batches so that the pieces are nicely coloured all over.
Transfer the meat to an ovenproof casserole with a lid. Season with salt and pepper. Stir in the tomato purΓ©e and cook for a minute. Sprinkle over the flour and mix.
Pour in the balsamic vinegar and let it bubble for a couple of minutes. Add the veal stock and red wine and bring to a gentle simmer.
Cut the bacon into strips, quarter the mushrooms and roughly chop the garlic. Lightly brown the bacon, mushrooms and garlic in a frying pan with a little butter. Stir this mixture and the pickled onions into the casserole.
Tie the thyme, parsley and bay leaves into a small bouquet and secure it to the piece of carrot with kitchen string. Add to the casserole.
Cover and cook in the middle of the oven for about 1Β½ hours, or until the meat is tender. Remove the herb bouquet before serving.
Serve with boiled potatoes and, if desired, roughly chopped parsley.
Dark berry notes complement the red-wine flavour and savoury bacon without becoming too sweet.
A delicious alternative that lets the food take centre stage.
