Juicy meatballs made with minced moose and thyme, served in a smooth cream sauce and topped with oyster mushrooms sautΓ©ed in butter. A game-inspired take on a Swedish home-cooking classic, served with boiled potatoes.

Peel and boil the potatoes.
Mix the breadcrumbs, cream, egg, salt and pepper. Leave to swell for a few minutes.
Combine the minced moose and thyme with the breadcrumb mixture. Shape into meatballs and brown all over in butter. Lift onto a plate.
Clean the oyster mushrooms and cut into smaller pieces. Fry in oil until nicely coloured. Season lightly and set aside.
Whisk the cream, milk, stock and cornstarch together in the frying pan. Simmer, stirring, and season with soy sauce and pepper.
Return the meatballs to the sauce and simmer for about 6 minutes, until cooked through. Top with the mushrooms and chopped chives.
Serve with boiled potatoes and shredded little gem lettuce.
Its fresh acidity cuts through the cream sauce and the richness of the mushrooms.
A delicious alternative that lets the food take centre stage.
