A complete, warming game dinner with a creamy gratin of potatoes, carrots and parsnips, topped with browned shredded moose and funnel chanterelles.

Preheat the oven to 225°C. Peel and thinly slice the potatoes, carrots and parsnips. Trim and slice the leek.
Arrange the vegetables and leek in a greased oven dish. Season with salt and pepper and pour over the cream.
Bake in the centre of the oven for about 35 minutes while preparing the game topping.
Clean the mushrooms and cut larger ones into smaller pieces. Finely chop the garlic. Brown the shredded moose in butter, then add the mushrooms and garlic. Stir in the tomato purée and fry for another minute. Season to taste.
Remove the gratin from the oven and spread the meat mixture over the centre. Sprinkle with cheese and pink peppercorns.
Return to the oven for about 20 minutes, until the root vegetables are tender and the top is golden. Cover with foil if the cheese browns too quickly.
A soft wine with herbal and dark-berry notes complements the mushrooms, root vegetables and game.
A delicious alternative that lets the food take centre stage.
