Oven-baked cod in a smooth dill sauce, served with a fresh cucumber salad flavoured with lemon and horseradish. A classic Nordic fish supper with freshly boiled potatoes.

Heat the oven to 225 Β°C. Boil the potatoes until tender.
Whisk the cream, milk and cornflour together in a saucepan. Crumble in the fish stock cube and bring to the boil, stirring. Season.
Chop the dill and stir most of it into the sauce. Place the cod in an ovenproof dish and pour over the sauce.
Bake high in the oven for about 10 minutes, or until cooked through and at an internal temperature of about 56 Β°C.
Thinly slice the cucumber. Finely grate the horseradish and lemon zest and squeeze in a little lemon juice. Mix with olive oil and the remaining dill. Fold in the cucumber and season.
Serve the cod with potatoes and the fresh cucumber salad.
Fresh acidity lifts the dill and lemon and balances the horseradish.
A delicious alternative that lets the food take centre stage.
