Beef chuck is slow-roasted in red wine until meltingly tender. A flavourful butter with sun-dried tomatoes, garlic and parsley adds a rich finish.

Heat the oven to 125 Β°C.
Season the beef all over with salt and pepper. Place in a lidded casserole or ovenproof dish.
Pour over the red wine and crumble in the stock cube. Cover tightly with a lid or foil.
Cook in the centre of the oven for about 4 hours, until the meat is very tender.
Finely chop the garlic and sun-dried tomatoes. Mix with the parsley, olive oil and softened butter.
Remove the meat and leave to rest briefly. Slice or pull apart and serve with the tomato and garlic butter.
The wine's dark fruit and spice complement the rich beef and garlic butter.
A delicious alternative that lets the food take centre stage.
